I found the makings of this recipe one day last week. Unfortunately, I have no idea where the original recipe is online. Of course, I made a few modifications to the recipe! So here's my version. It's delicious and super easy.
- 1 Onion, diced
- 2-3 Carrots, shredded
- 2 small Zucchini, shredded
- 4 ounces Tomato Paste
- 6 cups Chicken Broth
- 1 cup dried noodles, any type
- 8-10 oz package Tortellini
- Italian Seasonings
- Salt and Pepper
Sauté onions, carrots and zucchini in olive oil for 8-10 minutes, or until soft. Add tomato puree and broth. Bring to a boil, add noodles and boil for 5 minutes. Add tortellini and cook an additional 5 minutes. Lower heat and add seasonings. Salt and pepper to taste. Serve with parmesan cheese and dried parsley. Enjoy!
