Island Pork Tenderloin

This recipe is also called: Anthony's Favorite Meal. Whenever I make it, he is always ecstatic. Over the weekend, we had friends over and I decided to make the pork.

Two Christmases ago, we made a family cookbook comprised of all of our favorite foods. I was originally given this recipe from a coworker and I've made a few tweaks to it. Once I introduced it to the family, it's become a Malisa-signature meal and so I gladly added it to our cookbook. 

Ingredients

  • Spice Rub: 4 tsp. Salt, 1 tsp. Black Pepper, 2 tsp. Chili Powder, 2 tsp. Cinnamon, & 2 tsp. Ground Cumin
  • Glaze: 1 cup Brown Sugar, 4 tbsp. Chopped Garlic (4-5 large pieces), 2 tbsp. Hot Sauce, & 1-2 tbsp. Water
  • 2 Pork Tenderloins (about 2-2 1/2 pounds pork)

Directions

Preheat oven to 350 degrees. Spray a large baking dish (9 x 13) with cooking spray.

Mix spices in a small bowl. Rub liberally over all sides of the pork. 

Make glaze by heating all 4 ingredients in a small pan over medium heat until the mixture begins to bubble.

Pour glaze over the top of the pork and bake for 1 hour. Halfway through, spoon the glaze onto the pork again.

Let rest for 10 minutes before slicing pork at an angle in 1/2 inch pieces. Serve with glaze juices.

*This meal pairs well with mashed potatoes, green beans, and bread/salad!
