Green Salsa Chili

Hi! My name is also Melissa and I am the writer of Pretty Yummy Foods, wife to my very handsome husband, and mother to a bunch of very silly, very hungry little boys! These active boys keep me on my toes and I love keeping them busy with soccer, swimming, hockey and everything else in between. Speaking of keeping busy I have a feeling that you're also a super busy person and nowadays who isn't? Some of us might have gardens to tend to and we all have friends we would like to spend more time with. I'm sure you have a list of books you would like to read and there are always countless errands to run! At the end of a crazy day we all just want to relax and enjoy a home cooked meal, but who the heck has time to cook every night?! On particularly frantic days I look to my crock-pot for inspiration. I just love throwing in a bunch of ingredients before I leave the house for the day, and then coming home to the comforting smell of dinner that night. This white bean chili is everything I want out of a crock-pot meal! It's creamy, a little spicy, super tasty and chock-full of chicken and beans. Who knows you might even have time to throw together some cornbread, because I also have a feeling you're the kind of person who can truly do it all!

Here's what you're going to need:

  • 2 boneless, skinless chicken breast
  • 1 can of drained white beans & 1 can of drained kidney beans
  • half an onion, chopped
  • 1 cup of frozen corn
  • 1 cup of green salsa (Herdez is my favorite!)
  • 1 1/2 cups of chicken stock
  • 1 tablespoon of chili powder
  • 1/4 teaspoon of ground red pepper (more if you like things on the spicy side)
  • 1 tablespoon of flour (to help thicken up your chili)
  • salt and pepper to taste

Place all of these ingredients in your crock-pot and set it on low...

Six hours later you'll have a beautiful pot of home-made chili!

Because your chicken will be fork tender you'll be able to easily shred it with a potato masher!

If it feels like the right thing to do, you could stir in a spoonful of cream cheese right before serving!

When isn't a spoonful of cream cheese the right thing to do?!

Sit back, relax and enjoy a bowl of this hearty chili with someone you love.

Oh ya, don't forget to top it with a little pepper jack cheese! Yum!
