A few weeks ago, we had a date night planned. I made dinner in the slow cooker and we were going to use some of the movie tickets we got for Christmas. Perfect date night: fun meal and free movies!
Well...I didn't realize that green curry is the hot kind. I thought green was the mildest in the curry family. Turns out it is one of the spicier types.
Our meal was delicious, but Anthony was afraid he might be in the restroom instead of in the theatre, so we got a Redbox rental and stayed home.
I would highly recommend this meal and would rate it as a 3 or 4 on a 5-point hot scale. Anthony really liked it too, however spicy food isn't his friend.
- 6-7 chicken tenders, cut into pieces
- Trader Joe's Green Curry Sauce
- 2 cups frozen peas
- Rice (we used Jasmine)
Simmer the chicken tenders for 1 hour on high heat in the slow cooker. Stir in the peas and cook for an additional 10-15 minutes. Meanwhile, make rice in the rice cooker, on the stovetop, or heat up a bag of frozen rice!
Scoop the rice into a bowl and add the chicken & sauce. Enjoy!
*Note you can also cook the chicken on the stove in a pan instead of the slow cooker. I just don't have the best luck cooking chicken, so I prefer the slow cooker.
