A few weeks ago, Anthony and I had a day date and visited an Italian sandwich shop in El Dorado Hills. While we were waiting for our sandwiches, I saw this salad. I didn't try it, but I did snap a picture of it knowing I wanted to recreate it in the future.
A few days later, I was in Trader Joe's thinking of what I could make for dinner and thought of the photo. I looked at it and found everything I needed to buy there in good ole' TJ's!
- 1 lb. of Pasta (I used a combo of wheat & regular)
- 1 14 oz. can of Artichokes, marinated in water
- 10-14 Sun-Dried Tomatoes
- 4-8 pieces of cooked Bacon
- 1 6 oz. can of Sliced Black Olives
- 1/2 to 1 cup Marinated Feta Cheese
- Olive Oil
- Salt & Pepper
Boil the pasta according to the package instructions. Once it reaches al dente, drain and run cold water through it for a few minutes. Transfer the pasta to a large bowl. Add a few dashes of olive oil to the pasta and some salt and pepper. Stir to combine.
Cut the artichokes into bite size pieces. Roughly chop the tomatoes and bacon. Add all ingredients to the pasta and fold together. Adjust the seasonings depending on your preference. Refrigerate for 30 minutes and serve with a crusty bread or on its own!
