Pumpkin-Cinnamon Almond Oat Bars

This recipe was featured on a post from Bake Your Day. Even though it's still over 90 degrees outside, I can't wait to start using pumpkin in all my cooking. Pumpkin is one of my favorite foods and you can be sure I'll be posting lots of recipes with it as an ingredient!

I love the fact that there is no added fat/oil in this recipe and there aren't any eggs either. The original recipe calls for walnuts, but I used slivered almonds as I'm allergic to walnuts. I also added maple syrup as I thought it would compliment the pumpkin and cinnamon and it didn't disappoint.

Ingredients for the Bars

  • 2 cups Whole Oats, not instant
  • 1 tsp Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 1/2 tsp Salt
  • 1/4 cup Almonds, chopped
  • 1 cup Pure Pumpkin
  • 2 tsp Vanilla
  • 1/4 cup Applesauce
  • 2 tbsp. Honey
  • 1 tbsp. Maple Syrup
  • 1/2 cup Brown Sugar

Ingredients for Glaze

  • 2 tsp Maple Syrup
  • 2-3 tbsp Powdered Sugar
  • 1-3 tsp Milk
  • 1/4 tsp Cinnamon


Preheat oven to 350 degrees. Spray 8 x 8 baking pan with cooking spray. Mix all dry ingredients together in a large bowl (oats, cinnamon, pumpkin pie spice, salt, and almonds). In a separate bowl, thoroughly mix all wet ingredients (pumpkin, vanilla, applesauce, honey, maple syrup, and brown sugar). Pour wet mixture into dry and stir to combine. Pat into prepared baking dish. 

Bake for 40-45 minutes. Leave in pan for at least 20 minutes before cutting bars. In the meantime, mix all ingredients together for the glaze. Cut bars and enjoy!
