A few years ago I realized that I can't cook chicken breasts. The reason I came to this conclusion was that every time I made them they turned out under- or over- cooked. Then I discovered chicken breast tenderloins aka chicken tenders. They are a perfect size and I haven't ruined chicken in quite a while!
Trader Joe's sells this bag for $7 and it is 2 1/2 pounds. This is the same price per pound as they sell their chicken breasts.
My favorite way to prepare chicken tenders is to toss them into a zip-top bag (still frozen) and add teriyaki marinade. I let them thaw in the refrigerator over night and the next day they are perfect to go on the BBQ. I love serving them with rice and stir-fried veggies.
