Cheese Log, the Perfect Appetizer

Aunt Karen, Anthony's Aunt, is a great cook. She is famous for her pies and "the cheese log." The first time I tried said cheese log, I was in heaven. I wanted to share it here as it's a perfect appetizer to bring to a party or have a party because you want to eat the cheese log!


  • 2 8 oz packages Cream Cheese, softened
  • 1/3 cup Parmesan Cheese
  • Salt
  • 4-5 Chives, (green parts) chopped
  • Ham, chopped (if you desire)
  • 2-3 cups Almonds, sliced


Blend the cheese and salt together with a mixer. Test the mixture and adjust seasonings as desired. Stir in the chives and ham (if desired), being cautious to not over mix. Shape the cheese into a log or ball. 

Lightly toast almonds in an ungreased pan for a few minutes on medium heat. Cool the almonds. Lay out a piece of plastic wrap and place almonds on it. Place the cheese log on the almonds and use the plastic wrap to compress the almonds into the log. Serve with your favorite crackers or veggies!

Note: if you want, you can assemble the cheese log and refrigerate if need be. Be sure to not put the almonds on until you are ready to serve.
